As the weather gets cooler, a tasty warm curry is just the answer to feed a hungry family.
This marinade can be used on chicken or prawns and the recipe is base on marinating 2kg of protein. This quantity is perfect for a family of four as you have enough to eat one meal fresh and freeze three others down in batches. If using prawns as they have already been frozen (and should not be re frozen) divide the recipe down by the quantity of meat.
Ingredients
- 2 x tablespoons Greek yoghurt
- 2 x tablespoons lemon juice
- 2 x tablespoon crushed ginger
- 2 x tablespoon crushed garlic
- 2 x teaspoons salt
- 2 x teaspoons raw sugar
- 2 x teaspoons turmeric
- 2 x teaspoons ground coriander
- 2 x teaspoons ground cumin
- 2 x teaspoons garam masala
- 1/2 teaspoon nutmeg
- 1/4 teaspoon sunset orange ***
Method
Combine all ingredients in a mixing bowl.
Mix well with a whisk and pour over the protein.
For best results I like to massage the marinade into the meat and refrigerate for two hours. When using prawns or chicken breast do not marinate for longer than two hours or else they will become tight and dry. Chicken thigh or drumsticks can be left over night.
*** Sunset orange is a natural food colouring that gives the marinate the fiery red complexion. It can be found in Indian Bazaars. This ingredient serves no other purpose than giving your dish the appearance of restaurant quality Tandoori.
